- 1 lb chicken tenderloins
- Plain breadcrumbs (or Panko breadcrumbs)
- 2 tbsp olive oil
- 1 egg
- 1 tbsp mayonnaise
- 1 1/2 tbsp dijon mustard
- 2 tbsp flour
- 1/2 tsp salt
- Black pepper
- Season chicken with black pepper and salt. Combine batter ingredients in medium bowl, whisk until blended. Dip chicken tenderloins in batter, and toss in bread crumbs to coat. Put aside on plate.
- Heat olive oil in large pan over medium-high heat.
- Cook chicken on both sides until cooked through.
