Seven Layer Dip

This recipe is great to bring to a party, it serves lots of people and is easy to make. It also can be served at room temperature so you don’t have to worry about chilling or heating up at someone else’s house – it’s no frills!

Ingredients

  • 1 (1 ounce) package taco seasoning mix
  • 1 (16 ounce) can refried beans
  • 1 (8 ounce) package cream cheese, softened
  • 1 (16 ounce) container sour cream
  • 1 (16 ounce) jar salsa
  • 1 large tomato, chopped (or) a container of store bought pico de gallo
  • 1 bunch chopped green onions
  • 1 bag pre-shredded iceberg lettuce
  • 1 (6 ounce) can sliced black olives, drained
  • 2 cups shredded Cheddar cheese

Directions

  • In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
  • Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
  • Top the layers with salsa. Place a layer of tomato, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

Bacon Wrapped Dates Appetizer

These are absolutely delicious! The sweet and salty combo is just perfect, your guests will love them.

Ingredients

  • 1 (8 ounce) package pitted dates
  • 4 ounces shelled pistachios
  • 1 pound sliced bacon

Directions

  • Preheat the broiler.
  • Slit dates, remove pit if it is included. Place one pistachio inside each date. Wrap dates with bacon, using toothpicks to hold them together. Usually 1/2 of a bacon slice will cover one date.
  • Broil 10 minutes, or until bacon is evenly brown and crisp.

Homemade (and healthy!) Gummy Bears

I got these adorable gummy bear molds and was so excited to create a healthy spin on one of my favorite candies. These are amazingly good!

Ingredients

Directions

  • Whisk lemon, honey and gelatin in a sauce pan until there are no lumps.
  • Heat over low heat until the mixture is completely liquified, stirring constantly.
  • Add lemon essential oil.
  • Pour mixture into mold of choice, or you can even use ice cube trays. I use this Gummy Bear Tray.
  • Refrigerate until firm.
